Honey Roasted Parsnips

This honey roasted parsnips recipe has the perfect level of sweetness for a healthy side to your meal.

Do parsnips need to be peeled?

For this recipe, I like to peel my parsnips before cutting. Leaving the outer layer on will leave an earthy taste and the texture can be a little more coarse. If you have very thin parsnips, you could probably get away with just using a vegetable brush to scrub them.

How to make honey glazed parsnips?

The first step is to prep your parsnips by washing, peeling, and cutting them. Try to cut them into about the same size to help them cook evenly.

Boil the parsnips for about 8-10 minutes; this help to ensure the middle is soft before cooking them in the glaze. Next drain the parsnips. Heat butter in a skillet and then add the parsnips, honey, and cinnamon.

Cook over medium heat for about 5 minutes. Honey roasted parsnips are best served fresh.

Ingredients

Scale
  • 2 lbs parsnips, peeled and cut into slices
  • 4 cups water
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1 tbsp butter

Instructions

  1. Heat water in kettle over high heat until boiling. Add parsnips and boil for about 8-10 minutes
  2. Drain parsnips.
  3. Heat butter in pan over medium heat. Add parsnips, honey and cinnamon. 
  4. Cook over medium heat for about 5 minutes to allow glaze to thicken and parsnips to finish cooking.
