- 2 lbs sweet potato (cubed)
- 1/2 medium bell pepper (chopped)
- 1/2 cup onion (chopped)
- 1 tbsp olive oil
- salt and pepper (to taste)
- Optional: 1-2 eggs
Instructions
- Heat olive oil over medium heat in a skillet. Add chopped sweet potatoes, cover, and cook for about 8 minutes.
- Add bell pepper, onion, salt and pepper. Leave uncovered and cook for about 10 minutes, allowing it to brown.
- Serve with eggs, cooked to your preference.
