Mediterranean Chickpea Salad

Description

With fresh veggies, feta cheese, and an easy dressing this Mediterranean chickpea salad recipe is the perfect side or main dish for any meal.


Ingredients

Scale
  • 1 bell pepper (medium)
  • 1/2 red onion (medium)
  • 2 roma tomatoes
  • 1 can chickpeas (low sodium, rinsed)
  • 1 cucumber (medium)
  • 1/2 cup feta cheese (crumbles)
  • 1/4 cup olive oil
  • 1 clove minced garlic
  • 1 tsp oregano
  • 2 tbsp lemon juice

Instructions

  1. In a large bowl, add chickpeas, diced vegetables, and feta cheese
  2. In a small bowl, stir together olive oil, lemon juice, garlic, and oregano to make dressing
  3. Pour dressing into large bowl and stir to combine ingredients

Notes

Store in airtight container for up to 7 days in the fridge
