Ingredients

  • 1 lbs ground beef
  • 2 cups brussels sprouts (quartered)
  • 1 medium bell pepper (chopped)
  • 1 medium onion (chopped)
  • 1 tbsp olive oil
  • 1 tsp garlic (minced)
  • 1 tsp red pepper flakes (optional)
  • 1/2 tsp ground ginger
  • 1/4 tsp ground black pepper
  • 2 tbsp low sodium soy sauce
  • 1/2 tbsp rice vinegar
  • 1 cup low sodium beef broth

Instructions

  1. Heat 1 tbsp olive oil on stove over medium heat in large skillet.
  2. Add brussels sprouts to pan and cook for about 3 minutes, stirring occasionally. After 3 minutes, add bell pepper and onion to pan. Cook for 2-3 more minutes, until tender. Transfer to bowl and set aside.
  3. Using the same skillet, add ground beef and cook over medium-high heat, stirring occasionally.
  4. When ground beef is mostly brown, add minced garlic, red pepper flakes, ginger, and ground black pepper. Stir until combined and finish browning meat.
  5. Add brussels sprouts, bell pepper, and onion back to skillet and stir. Stir in beef broth, soy sauce, and rice vinegar. Reduce to low-medium heat and simmer for 5 minutes
  6. Serve over rice or quinoa and enjoy!
