- 16 oz chicken breast (cooked and shredded)
- 1 cup grapes (halved)
- 2/3 cup celery (diced)
- 1/2 cup red onion (diced)
- 1/2 cup water chestnuts (diced)
- 1 large avocado (mashed)
- 1 tbsp lemon juice
- salt and pepper (to taste)
Instructions
- In a large bowl, add avocado and lemon juice, stir to soften and mash the avocado
- Add the remaining ingredients and gently stir until combined
- Serve over a salad, bread, or in a wrap. To store put in a sealed container in the fridge.
