Quick and healthy lunches are a must during the work week. Typically, when cooking chicken I make extra to use for lunches throughout the week. And that extra chicken is perfect to use in this chicken salad wrap recipe.

To make this recipe, you’ll need celery, grapes, onion, chicken, avocado, water chestnuts, and lemon juice.

Start by prepping your ingredients. If you don’t have any leftover chicken on hand, baking a few chicken breast with basic seasoning (pepper, salt and any other favorites) will do the trick.

After your ingredients are chopped and ready to go, start by adding the avocado and lemon juice to a large bowl, stir to soften and mash.

Then add all the rest of the ingredients and stir until combined.

How to serve chicken salad

You have a few options for serving the avocado chicken salad. A few of my favorites:

Ingredients

  • 16 oz chicken breast (cooked and shredded)
  • 1 cup grapes (halved)
  • 2/3 cup celery (diced)
  • 1/2 cup red onion (diced)
  • 1/2 cup water chestnuts (diced)
  • 1 large avocado (mashed)
  • 1 tbsp lemon juice
  • salt and pepper (to taste)

Instructions

  1. In a large bowl, add avocado and lemon juice, stir to soften and mash the avocado
  2. Add the remaining ingredients and gently stir until combined
  3. Serve over a salad, bread, or in a wrap. To store put in a sealed container in the fridge.
