3 Ingredient Banana Oatmeal Pancakes

This easy 3 ingredient banana oatmeal pancakes recipe is the perfect go-to recipe for a healthy, delicious breakfast. It’s even more perfect topped with any of your favorite fruits, nuts, or chocolate.

I always seem to have extra bananas around that are getting a little too ripe for me to eat, and this is the perfect use for them.

How to Make 3 Ingredient Banana Oatmeal Pancakes

All you need to make this is a ripe medium-large banana, an egg, and half a cup of oatmeal.

If you have a smaller sized banana on hand, I’d recommend using only a quarter cup of oatmeal to keep the pancakes from being too dry.

The first step is to mash up the banana in a medium bowl using a fork.

Then add the egg and half a cup of oatmeal to the bowl.

Stir to combine ingredients.

Heat about 1 tablespoon or cooking spray on a griddle over a medium heat. Pour the pancake batter onto a heated griddle or pan into about 3 inch in diameter.

Cook for about 3-4 minutes or until golden brown then flip. Cook on the other side for an additional 3-4 minutes or until golden brown.

Serve with your choice of toppings, like fruit, nuts, chocolate chips, and syrup.

This recipe serves about 1 person, but can easily be multiplied to serve more.

Sometimes I like to add extra flavors to the pancake batter to mix up this recipe, even though it’s delicious without anything extra.

Why are my banana oat pancakes mushy?

Your banana oat pancakes can turn out mushy if your ratio of dry to wet ingredients gets off. You want about a 1 to 1 ratio of dry to get ingredients. The moisture from the egg and banana offset soaks into the oats. If your eggs or bananas are larger than usual, you could end up with mushy pancakes.

Instructions

  1. Mash banana in medium bowl
  2. Add oatmeal and egg to bowl and stir until combined
  3. Heat a non-stick griddle or pan over medium heat. Pour batter onto pan to create about a 3 inch diameter
  4. Cook for about 3-4 minutes or until golden brown then flip pancakes and cook for an additional 3-4 minutes or until golden brown.

Notes

Optional step: Add mix-ins to the batter before cooking for extra flavor, like vanilla, fruit, nuts, chocolate, cinnamon, etc.

This recipes creates about 1 serving. If you’re cooking for more people simply increase the number of ingredients (for 4 servings use 4 bananas, 4 eggs, and 4 cups of oats)
